    Fans might know about his cheeseburger obsession from his memoir, “Greenlights,” but McConaughey recently revealed another simple yet quintessentially Texan favorite: a two-ingredient bite that’s both kicked up and full of comfort.

    When we think of classic Texas flavors, a few dishes come to mind: a hearty Texas chili (hold the beans), a spicy sausage kolache, or even the prize-winning pudding dessert known as Texas Delight. 

    For Matthew McConaughey, Texas flavor is perfectly captured in a simple two-ingredient combo that might surprise you. During an appearance on the Today Show, the McConaughey family shared some of their favorite Texas-inspired dishes and introduced to the world what they call their “favorite Texas bite.”

    It all starts at Opie’s BBQ, a beloved establishment outside of Austin serving up world-class smoked meats and classic Southern sides. But, when the McConaugheys pay Opie’s a visit, their order always includes two staples: jalapeño sausage and spicy corn.

    McConaughey demonstrated the combo himself: first, slice a piece of jalapeño sausage, then smother it in a heaping scoop of Opie’s rich, spicy corn. The smooth, creamy texture of the corn pairs perfectly with the smoky, savory snap of the sausage, packing the boldness of Texas cuisine into one bite.

    How To Make Opie’s BBQ’s Spicy Corn

    This creamy, comforting corn dish is quick to prepare, requiring just one dish and 10 minutes of prep time, making it an ideal side or game day snack.

    Start by melting butter and cream cheese in a baking dish until warmed through. Then, add canned corn, salt, pepper, and cayenne, stirring to combine. Next, mix in diced jalapeños (canned in water, not vinegar) and green chilies. Pour in 1 1/2 cups of milk and stir everything together until smooth. Finally, bake the dish at 400 degrees F (200 degrees C) for 40 to 45 minutes, stirring halfway through.

    To stay true to the McConaughey way, just one thing remains: Slice up some jalapeño sausage and get to dipping. Whether you’re a fan of McConaughey or simply in the mood for an easy Southern-inspired snack, give this simple combo a try to bring a taste of Texas to any state.
