As a kid, one of my very favorite “snacks” was fresh lemon wheels. I’d break them in half, peel them open, then blissfully eat the juicy sections of fresh citrus inside. I couldn’t resist the bright, tangy flavor. After solidifying this snack into a bit of a habit, the dentist quickly put a stop to it. Turns out, the acid from fresh citrus is not ideal for a growing set of teeth.
I will say, from time to time, I’ll still sneak a whole wheel of lemon. It’s one of my very favorite flavors in the world, and many of the savory dishes and desserts I gravitate towards are lemon-based. A Bright Idea
I have a general rule in my house, which is that the cake stand should never be empty. What’s life without a little sweet treat? When I recently got a look at my mountain of citrus and an empty cake plate, I knew I had to fix that, fast. I love a good snacking cake—I’m not much for frosting and multiple layers of cake usually overwhelm me—so I decided to play around with developing a super-simple snack cake bursting with lemon flavor.
When I get these ideas, they usually go one of two ways: I absolutely smash it out of the park on the first go, or it’s a complete and utter disaster. Unfortunately, the testing process of this cake did not go exactly as planned, but in the end, all the juice was definitely worth the squeeze!
Working with an ingredient that is full of acid can be a tricky business when making cake. The acid can greatly impact the rise and interfere with the baking soda and baking powder. After a few tweaks and several additional cakes, I got this recipe exactly where I wanted to. The cake is fluffy, rich, and moist and smells like cutting into a fresh lemon!

Easy-Peasy, Lemon-Squeezy
This cake is quick and relatively mess-free to make. All you need to make it is one large bowl, and no stand mixer or hand mixer is required. It’s tasty enough to eat on its own, or you can add a quick and easy lemon glaze to dress it up a bit. The cake is not overly sweet, so it works for breakfast, but ideally it’s best enjoyed as an afternoon snack!
Yogurt keeps the cake moist, and gives it a light, bouncy texture. Full-fat plan yogurt is best, but Greek yogurt or even a lemon-flavored yogurt could work, too.
Tips for Making My One-Bowl Lemon Snack Cake
- Easily swap the citrus: This cake will work well with any citrus fruit. The only exception would be blood oranges—the flavor will be just fine, but I’ve found that baking with blood oranges can cause the cake to turn an unsightly blue hue when the blood orange juice interacts with the chemical leavener. But limes, oranges, grapefruit—go for it!
- Give your sugar a massage: If you are in a rush, you may be tempted to skip the process of massaging the zest into the sugar, but I will say this is crucial for optimal flavor. Doing so releases all the essential oils in the lemon zest which will really infuse the entire cake with the essence of fresh lemon.
- Use the oil you’ve got: I love the fruity flavor that olive oil adds to this cake, but you could use the vegetable oil of your choice or canola oil, if you prefer.
