I Upgraded My Rice Krispies Treats With This New Cinnamon Cereal

Unlike choosing a favorite child, choosing a favorite flavor as a home baker is perfectly acceptable. Mine is cinnamon.

Growing up, I went through an entire loaf of bread each week—toasting the slices, spreading them with butter, and showering them with cinnamon-sugar. I still keep a homemade shaker on hand, but these days it’s for sweetening my morning coffee or a bowl of oatmeal.

So naturally, when I learned that Pebbles cereal—another childhood favorite—was set to re-release its cinnamon-flavored crispy rice cereal after almost 10 years, I was ecstatic. I had to get my hands on a box immediately and figure out how to turn it into a crispy rice treat bar—yet another classic dessert I love.

How To Get Your Hands on New Cinnamon PEBBLES 

There are other cinnamon-flavored cereals, and then there are Cinnamon Pebbles for true cinnamon lovers. Hitting select stores on Dec. 1, 2025, and rolling out nationwide in January 2026, this cereal has the same tender-crisp rice pieces you know from the Fruity and Cocoa varieties, but with a warm, lightly spiced cinnamon flavor. Check big-box grocery stores in your neighborhood!

With cold milk, it isn’t too sweet and makes the best cinnamon-flavored milk to slurp up afterward. But eating it straight from the bowl isn’t the only way to enjoy this cereal, so I made crispy rice treats with it.

How To Make Cinnamon Pebbles Crispy Rice Treats 

Cinnamon Pebbles might be the ideal cereal for turning into crispy rice treat bars. You could use almost any standard recipe, but here’s my favorite method.

Line an 8×8-inch baking pan with parchment and coat it with nonstick spray. Set it aside while you make the treats.

In a large pan or Dutch oven, melt six tablespoons of salted butter. If you have a few extra minutes, you can brown the butter for a toasty, nutty flavor.

Add a 10-ounce bag of mini marshmallows and stir until melted. Remove the pan from the heat, then add a splash of vanilla extract, a pinch of salt, and an entire 11-ounce box of Cinnamon Pebbles. Mix well until combined. If you like extra pockets of gooey marshmallow, fold in an additional cup of mini marshmallows before pressing the mixture into the pan.

Press the mixture into the prepared pan and sprinkle cinnamon-sugar on top—it looks pretty and adds a crunchy sweetness. Let the bars cool for about two hours before slicing.

Leftovers keep well at room temperature for about three days in an airtight container. For me, the warm spice of the cereal pairs best with coffee. I’ve also packed the bars into my kids’ lunchboxes—I’m trying to convince them that cinnamon should be their favorite flavor too.
