Is there anything a Costco rotisserie chicken can’t do? The budget-friendly protein is a favorite among warehouse members, and it’s easy to see why. It’s a weeknight dinner hero when you’re too tired to cook, and pairs wonderfully with any of the store’s prepared sides. Not to mention, it’s an excellent shortcut for making casseroles, enchiladas, chicken salad, or basically anything that requires a few cups of cooked chicken.
Recently, we spotted a new viral recipe featuring Costco’s legendary bird, and all you need is a few simple ingredients to whip up this family-friendly dish.
How To Make the Viral Costco Scallion Chicken Rice
In the video, we see @tiffycooks start by shredding a Costco rotisserie chicken into a large bowl. The next step, however, proves to be a bit divisive among viewers. The deboned chicken is returned to its plastic bag and combined with warm rice, scallions, scallion sauce, and shallot oil. Finally, the TikToker shakes up the bag before digging in.
The comments section quickly amassed hundreds of reactions. “Kind of grossed me out that it’s in the bag,” wrote one person. “Totally into this except for the plastic bag,” another added.
Many came to the creator’s defense, stating that the bag is food safe and contains broth that will enhance the meal. “The bag is always full of lots of juice from the chicken that has a ton of flavor. I pour it off and freeze it to use in stocks and stuff—it makes sense to sop it up with rice,” wrote one person.
“Genius,” another person stated. “I could eat this every day!” exclaimed another.
A few expressed concern that this meal would take much longer than five minutes. Luckily, if you’re pressed for time, there are a couple of shortcuts you can use to keep things on track. For instance, using microwave pouches of instant rice rather than cooking it on the stovetop, or using your stand mixer to shred the chicken—just be sure to pull it off the bones first!
